Lo ZERO 140 Riserva Pas Dosé Enrico Serafino it is the first Alta Langa with extreme refinement ever produced: it is thanks to its refinement of almost 12 years that this wine acquires the elegance and complexity that distinguish it. Produced with 85% Pinot Nero grapes and 15% Chardonnay, grown on the clayey-calcareous soils of Mango, Loazzolo and Bubbio, between Asti and Cuneo. After harvesting by hand, the bunches are carefully selected and pressed in the absence of nitrogen, without the use of augers to safeguard the characteristics of the bunch. The must thus obtained then ferments in steel tanks and remains on the lees with batonnage for 6 months. The second fermentation takes place following the classic method, with fermentation in the bottle, aging on the lees for 140 months and late disgorgement.
Characteristics of Alta Langa Zero 140 Riserva Pas Dosé
Upon organoleptic examination this Piedmontese wine shows a straw yellow color with golden reflections. The perlage is fine and persistent. On the nose there are deep hints of candied fruit, honey, hazelnuts. In the mouth it is complex, buttery and creamy, with a long mineral finish.
