Ferrari Perlè Nero 2013 Trento DOC Cased

Trento DOC Extra Brut “Perlé Nero” is the only Blanc de Noirs from the Ferrari winery, the only sparkling wine produced exclusively from red berried grapes. For the Lunelli family, today the owners of this prestigious winery, the challenge was precisely this: to translate the power and finesse of Pinot Nero into a Classic Method with a perfect Ferrari style. The chosen dosage is that of Extra Brut, so that the austerities of Pinot Noir are only slightly blunted and its soul is left free to express itself at its best in terms of elegance and structure.

Ferrari's Perlé Nero comes from the most careful selection of Pinot Noir grapes, harvested by hand in the best owned vineyards located in the highest mountainous areas. As with any Classic Method, the production consists of two phases. During the first the base wine is made, through a normal white vinification of the grapes; the second phase is instead that of refermentation in the bottle. At the end of it, the sugar turned into alcohol and carbon dioxide. During the period of rest in the bottle, the yeasts disintegrate, releasing hints of bakery and pastry, typical of every Classic Method sparkling wine, and giving a unique complexity, always different. In this case the sparkling wine rests on the lees in the bottle for at least 6 years.

Perlé Nero Ferrari sparkling wine is a mixture of austere nature and persuasive character. At sight it shows a golden yellow color with a lively and brilliant perlage. Its scent, accentuated by the movement of the bubbles inside the glass, is diversified into fruity and floral, mineral and toasted hints. In the mouth it is enveloping and silky, but perfectly balanced by freshness and flavor and enlivened by the refined pungency of carbon dioxide. The finish is precise and fine, very persistent. Due to the beautiful complexity of aromas and aromas, it is difficult to break away from the glass.
